Soak barley for 15mins and then boil it in a pressure cooker with 1glass of water. Keep the cooked barley aside along with the water.
Cut the Moringa stem into pieces and pressure cook it till one whistle. Grind the mixture and strain it
Chop all the vegetables as mentioned and keep them aside
Take a pan, heat 1tbsp olive oil and saute the chopped tomatoes, broccoli, carrot, onions, cabbage and sweet corn it in unit the onions become light brown in colour. Then add little salt and pepper and the cooked barley along with its water and let it simmer for 10mins.
Now let’s start the final process, take an empty pan add little oil, 1tbsp grated ginger, 7-8pcs of curry leaves, 1tsp jeera, 0.5tsp turmeric powder and the cooked kidney beans, stir it for a minute. Then add the moringa slurry and stir it for 2mins.
In the same pan add cooked vegetables along with the broth and mix it well. Lastly, add the chopped coriander and pour it in a bowl. You can also garnish it with some grated cheese (Optional).
